Recipe - Simon's Homemade Protein Bread

Today, discover the recipe of protein bread with Cricket Powder from our Ambassador Simon Gauthier!

For this recipe, you will need a bowl, a microwave, a bread machine and the following ingredients

  • 1 cup of water (240 ml)
  • 3 Tbsp of butter or coconut oil (45 g)
  • 1 1/2 Tbsp of honey (30 g)
  • 1 1/2 teaspoons lemon juice (8 ml)
  • 3/4 teaspoon coarse salt (8 g)
  • ± 3/4 teaspoon ginger (5 g), to taste!
  • 270 grams of bread flour
  • 100 grams of Näak cricket powder 
  • 3 tablespoons of wheat semolina (45 g)
  • 2 teaspoons of dehydrated yeast (8 gr)

First step:

Put the butter (or coconut oil) in a container with the water.
Place the container in the microwave for 30 seconds at 700W to warm it up.

Chef's note: "Put 30 seconds in the microwave. This step is necessary to get the water and butter, which are normally in the fridge, to just the right temperature. Too low or too high temperatures of the ingredients will prevent the yeast from activating properly."

Second step:

Pour the water and warm butter into the bread machine's mixer.
Stir in the remaining ingredients.

Third step:

Start a bread machine cycle and take it out once it's baked! 

Tada ! 

Note to the impatient ones: You'll want to give the bread time to cool before slicing. This will allow it to keep the moisture inside, which will make it even softer and more tender!
